Marinated Tomatoes

3 large ripe tomatoes

3 Tbsp. olive oil

2 Tbsp. red wine vinegar

1/2 tsp. salt

1/4 tsp. pepper

1 garlic clove, minced

2 Tbsp. fresh parsley, minced

1 Tbsp. fresh basil, chopped

Slice tomatoes in thick slices.  Mix remaining ingredients, pour over tomato slices and marinate in the refrigerator for several hours.
